Bistecca alla Fiorentina

Bistecca Alla Fiorentina2This steak is in one word, incredible. If you can’t get to Perseus, the restaurant in Florence Italy that claims to serve the best Bistecca alla Fiorentina in the world, then you just gotta make it yourself. It’s very easy to make and for this steak it’s best to use a hot charcoal grill.

 

You’ll need:

  • 2″-3″ thick porterhouse steak brought to room temperature
  • Salt

 

Directions:

  1. Make sure your steak is at room temperature
  2. Pat dry with a paper towel then season with salt
  3. Place the steak on the grill and let it cook for 8-12 minutes, flip
  4. Continue to cook until Rare, internal temp 125-130 degrees
  5. Remove and let rest for 10 minutes before carving.

 

Perseus serves it only one way, rare. I hear if you pressure them to cook it another way or ask for steak sauce or ketchup they politely ask you to choose another restaurant. You just gotta love a restaurant that is so passionate about what they do. For now I’ll just make it at home, until I make it to Perseus.
