This holiday is about Friends and Family and being thankful
November 25th, 2010Over the past few weeks I have watched every celebrity chef on every TV show, show the new way to cook a turkey. Cut it up into parts and cook it or de-bone it then cook it or use this rub or that rub, smaller is better than bigger and then the countless herbs pushed under the skin.
Me, I am making the Turkey the way I always have, plain, simple, a little butter at 350 degrees. The way my family has made it for over 50 years.
This holiday is about Friends and Family and being thankful…. I believe the turkey brought out on a platter should be in tact, no matter how it tastes and I am sure it tastes perfect to you and yours. I know it always does to mine.
This holiday will become a wonderful memory of holidays gone by and hopefully many to come. So to all those celebrity chefs with the new way to make a turkey, I say, thank you for the suggestions, but I am making mine — the way I always have.

Yellow Squash and Pesto Recipe

Try this squash recipe below, I think it will help your customers enjoy your squash even more!
- Chop or slice the squash and place a light coat of olive oil and some salt and pepper.
- Place in the oven at 400 degrees for 20 min or until cooked and golden.
- Then in a processor put some fresh basil, olive oil and parmesan. You can add a little fresh lemon juice but not much. Your done.
This is great as a sauce for a cold or hot summer pasta salad! And lastly, I would toss in my squash and basil sauce.
I can give you some other recipes that use additional veggies but if you are looking to move the yellow squash this is a winner! You could make it a cold pasta tasting. I would use mini penne pasta this way the sauce will get inside the tubes and make it tastier, very simple to make. I would make a big bowl and just place it on some crushed ice at the market. If you need other ideas let me know, but I think this one just using the squash is really cool.

Here’s an update on the farmer’s market. EVERYONE liked your Summer Squash Pesto. I actually ran out of bread before I ran out of the pesto. Problem is everyone has squash now although I did sell some. I came home from the market with the leftover pesto and made myself some spaghetti and put the pesto on it. Delicious! I gave out your recipe and talked a lot about you and your meatballs. I had a good morning and lots of fun and sold lots of other things. I brought the camera to take pictures to send you and then forgot about it. Oh well, next week.”

February 8th, 2010I just wanted to write to tell you how My Wife and I are very pleased with your Mama MANCINI’s Famous meatballs and Sunday sauce. We purchased 2 qty 6 boxes to have with Zity and Sauce that we planned for dinner. We did not know what to expect because from previous experience at friends houses where they purchased no-name brand frozen meatballs that had the consistancy of a tennis ball and tasted disgusting.
I read the box and looked at the packaging and it quality written all over it. We got home a little late from food store and we and the kids were hungry so we followed the microwave instructions. We and our Kids are completely amazed and impressed by the quality of the meatballs. They tasted like home made meatballs and the sauce is superb. You hit a homerun with your product and I hope you sell millions. You have made a new fan and we will continue to purchase these meatballs on days when my wife does not make them from scratch or my Dad in law does not send over his home made ones…You will laugh but I am telling you the truth..Your meatballs are better then my wifes or my father in laws home made ones!!… My wife also agree’s. Please continue to supply my shoprite with your product (Liberty,New York) and we will continue to buy them and also recommend to family and friends.
