Fresh Corn Salad
Corn is delicious. This is my recipe for a Fresh Corn Salad.
You’ll need:
- 6 ears of corn
- 1/2 cup red onion diced.
- 3-very ripe plum tomatoes diced or a pint of cherry tomatoes quartered
- 1/2-cup chopped fresh basil
- 4-tbs extra virgin olive oil.
- 2-tbs red wine vinegar
- 1 tbs fresh lemon juice.
- 1 tsp salt.
- 1 tsp fresh ground black pepper
Directions:
- In a large pot, boil the corn for 3-5 minutes then chill the corn down in a ice bath.
- Once you can handle the corn cut the kernels off the cobs and place in the bowl you are going to serve the salad in.
- Add the balance of the ingredients and mix everything together.
- Taste for salt n pepper.
- Cover with plastic wrap and place in the fridge for a couple hours to chill and let all the flavors come together.
- Toss before serving.
