Fresh Corn Salad

Fresh Corn SaladCorn is delicious. This is my recipe for a Fresh Corn Salad.

 

You’ll need:

  • 6 ears of corn
  • 1/2 cup red onion diced.
  • 3-very ripe plum tomatoes diced or a pint of cherry tomatoes quartered
  • 1/2-cup chopped fresh basil
  • 4-tbs extra virgin olive oil.
  • 2-tbs red wine vinegar
  • 1 tbs fresh lemon juice.
  • 1 tsp salt.
  • 1 tsp fresh ground black pepper

 

Directions:

  1. In a large pot, boil the corn for 3-5 minutes then chill the corn down in a ice bath.
  2. Once you can handle the corn cut the kernels off the cobs and place in the bowl you are going to serve the salad in.
  3. Add the balance of the ingredients and mix everything together.
  4. Taste for salt n pepper.
  5. Cover with plastic wrap and place in the fridge for a couple hours to chill and let all the flavors come together.
  6. Toss before serving.
