Gluten Free Stuffed Artichokes

Gluten Free Stuffed Artichokes(1) Gluten Free Stuffed Artichokes(2) Gluten Free Stuffed ArtichokesSo lots of people follow a gluten free diet and I thought I needed to develop a stuffed artichoke that did not have bread crumbs! Stuffed artichokes are so good and everyone needs to be able to enjoy them so I worked on this today. I gotta say this came out great and was packed with so much flavor and I will be making them again.

You’ll need:

  • 1-cup of chopped onion
  • 3 garlic cloves
  • 1 portobello mushroom cap
  • 1-tsp salt
  • 1/2-tsp black cracked pepper

(Place all of these into a food processor and pulsed till finely chopped)

Directions:

  1. Heat 2 tbs of olive oil in a skillet and sauté stuffing for 15 minutes on a medium heat (do not burn it)
  2. Remove from the heat and allow to cool.
  3. Fold 1/2 cup of grated Romano or Parmesan cheese into the stuffing.
  4. Prepare 2 jumbo artichokes by snipping off the pointy tips, bottom stem cut off and top cut off
  5. Put these open end down in a pot with about an inch of water, covered the pot and let this boil/steam until a knife slid easily into the bottom stem (This took about 30 minutes, replacing water as needed)
  6. When done remove the choke and fill the artichoke with the stuffing
  7. Top this with some more grated cheese and place in a pre heated 400 degree oven to heat through and melt the cheese

Serve with some melted butter for dipping.
