Italian Style Meatloaf
I love meatloaf and what is better than a meatloaf sandwich the next day?
You’ll need:
- 2 tbs butter
- 1/2 cup of minced onion
- 1/2 cup celery minced
- 1 Tbsp minced garlic
- 1/4 cup carrot, minced
- 2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 tbs Worcestershire sauce
- 2 tbs tomato paste
- 2 lbs ground beef
- 1/2 cup bread crumbs
- 1 large egg beaten
- 1/4 cup chopped fresh parsley leaves
- An extra 2 tbs of tomato paste for the top of the meatloaf
Directions:
- Take the onion, garlic, carrot and celery and if you have one pulse it in a food processor until very minced (if not just try to mince very fine with a knife)
- Take a skillet add the butter, salt and pepper and turn the heat to high and add this veggie mixture
- Sauté this until translucent and soft about 5 minutes
- In a large bowl add all of the ingredients (except the extra tomato paste for the top of the meatloaf) and mix well by hand
- Form into a loaf and place on a baking sheet or use a meatloaf pan
- Spread the remaining 2- tbs of tomato paste on top
- Place in a 375 degree pre heated oven until internal temperature reaches 160 degrees
- Allow the meatloaf to rest for 10 minutes before serving
