Italian Style Meatloaf

Italian Style MeatloafI love meatloaf and what is better than a meatloaf sandwich the next day?

 

You’ll need:

  • 2 tbs butter
  • 1/2 cup of minced onion
  • 1/2 cup celery minced
  • 1 Tbsp minced garlic
  • 1/4 cup carrot, minced
  • 2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tbs Worcestershire sauce
  • 2 tbs tomato paste
  • 2 lbs ground beef
  • 1/2 cup bread crumbs
  • 1 large egg beaten
  • 1/4 cup chopped fresh parsley leaves
  • An extra 2 tbs of tomato paste for the top of the meatloaf

 

Directions:

  1. Take the onion, garlic, carrot and celery and if you have one pulse it in a food processor until very minced (if not just try to mince very fine with a knife)
  2. Take a skillet add the butter, salt and pepper and turn the heat to high and add this veggie mixture
  3. Sauté this until translucent and soft about 5 minutes
  4. In a large bowl add all of the ingredients (except the extra tomato paste for the top of the meatloaf) and mix well by hand
  5. Form into a loaf and place on a baking sheet or use a meatloaf pan
  6. Spread the remaining 2- tbs of tomato paste on top
  7. Place in a 375 degree pre heated oven until internal temperature reaches 160 degrees
  8. Allow the meatloaf to rest for 10 minutes before serving
