Mac n Cheese for the Comfort Food Foodies
Another Mac n Cheese for the Comfort Food Foodies!
You’ll need:
- 2 cups milk
- 2 cups of heavy cream
- 8 tbs butter
- 1/2 cup minced onion
- 1/2 cup all-purpose flour
- 2 tsp salt
- 1/4 teaspoon freshly ground black pepper
- 4-cups shredded extra sharp Cheddar cheese
- 1/2 cup grated pecorino Romano cheese
- 1 lb elbow macaroni
- 1 cup bread crumbs (topping)
- 2-tbs melted butter (topping)
- 1/2 cup Romano cheese (topping)
- 1/2 cup shredded cheddar (topping)
Directions:

Topping-melt the butter and mix all the topping ingredients together and set aside

Heat the milk and cream in a saucepan over medium heat until it begins to boil then turn off heat add the salt and cover

In a large saucepan, melt the butter over medium heat add the minced onion and sauté for 2 minutes

Then slowly whisk in the flour adjusting heat to a very low heat for 3-5 minutes or until this turns to a light golden brown color

Now slowly add the hot milk to the flour mixture while whisking it constantly until fully mixed together

Return the saucepan to a medium heat and whisking constantly for 2-3 minutes until the sauce becomes thick enough to coat the back of a spoon

Now lower the heat to low and slowly add all the cheese until the cheese is fully melted

Prepare the pasta 2 minutes short of recommended time, strain and remove as much water as possible

Add the pasta to the cheese sauce and stir to completely mix this together

Pour the Mac n cheese into a baking dish and if using the topping, top with the bread crumb mixture

Bake the Mac n cheese for 30 minutes in a 400 degree pre heated oven until bubbling and the top becomes golden brown.

Remove from oven and let sit for 5 minutes before serving.
