Macaroni and Peas
If you haven’t tried my recipe for macaroni n peas you should. That’s assuming you like peas and if you don’t like peas maybe this recipe will change your mind.
You’ll need:
- 1 28 ounce can Whole Italian Plum Tomatoes crushed by hand.
- 1/2-1 cup sliced onions, your choice
- 4-6 garlic cloves sliced also your choice
- 1-tsp crushed red pepper flakes
- 2 tbs of extra virgin olive oil
- 1- 2 cups depending on your taste, of frozen peas, thawed.
- 1 cup sliced baby bella mushrooms
- Your favorite pasta
Directions:
- In a large skillet 12″-13″ heat the olive oil then sauté the mushrooms, crushed pepper flakes, onions and garlic for 5 minutes
- Now add the hand crushed tomatoes and all the juice
- Bring this to a boil then lower the heat to a simmer and allow this simmer for 20 min
- Now add the peas and continue to simmer for 5 more minutes
- Cook your pasta 2 minutes short of the recommended time, strain and add the pasta to the sauce
- Finish the pasta in the sauce until it is done
- Serve with a drizzle of extra virgin olive oil and some grated pecorino romano cheese
