Macaroni with Grandma Sauce and Sausage

Macaroni with Grandma Sauce and SausageI got a request for this recipe and boy am I glad I did because now I am gonna make it! This is without doubt one of my favorite pasta sauce recipes.
I love recipes that I can read in a minute and understand it. That’s the way I love to cook, I call it “Grandma Style”.

You’ll need:

  • 1 lb of Italian sweet sausages removed from the casing, cut into 1″ pieces
  • 1 28 ounce can of Italian plum tomatoes crushed by hand
  • 4 cloves of garlic sliced
  • 1/2 cup sliced onion
  • 1 tsp of crushed red pepper flakes
  • 1 tsp salt
  • 5 fresh basil leaves (optional)
  • 2 tbs extra virgin olive oil
  • 1 lb of penne pasta or your favorite cut

Directions:

  1. Get a large pot of salted water boiling for the pasta
  2. In a large skillet heat the olive oil and toss in the garlic, onion, pepper flakes and the sausage
  3. Once the sausage is browned add the tomatoes with all the juice and the salt
  4. Stir everything together and simmer un-covered on a low boil for 15 minutes
  5. At this point add the basil leaves and stir into the sauce and turn off the heat
  6. Now cook your pasta 2 minutes short of recommended time, strain and add the pasta to the sauce and put the heat on medium, fold the pasta into the sauce for the remaining 2 minutes to finish cooking the pasta
  7. Top with grated pecorino romano cheese and a drizzle of extra virgin olive oil

I love this sauce so much and I make it often. Give it a try, I am telling you, you will LOVE it.
