Orzo Salad

Orzo SaladPerfect as a side or just as a light dinner. Dang I love summer.

 

You’ll need:

  • 1 lb orzo
  • 1/ chopped red bell pepper
  • 1/4 chopped red onion
  • 2 garlic cloves minced
  • 1/2 cup crumbled feta cheese
  • Extra virgin olive oil
  • Red wine vinegar
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • Juice of one lemon
  • 2 cups baby arugula

 

Directions:

  1. Cook the orzo strain and put in a bowl.
  2. Add 1/2 cup olive oil and 1/4 cup of red wine vinegar and toss with all the ingredients except the arugula.
  3. Place in the fridge covered with plastic wrap and allow this to chill for a couple hours. Right before you serve the salad add the arugula, lemon juice and toss.
