Panzanella Salad
It’s TOMATO SEASON! A Tuscan salad made with bread and tomatoes! That’s the base. We add some other items, check it out and tell me this isn’t a must make.
You’ll need:
- A nice Italian bread
- Ripe Tomatoes cut up
- Red Onion sliced thin
- Cucumber cut up
- Cubed mozzarella or provolone
- Red wine vinegar
- Extra virgin olive oil
- Salt
- Pepper
Directions:
- Cut the bread into cubes and place in a big bowl
- Cut up the tomatoes and place in the bowl with all the juice
- Add all the onion and cucumber
- In a small jar or bowl mix together 5-1/2 cup of olive oil and 1/4 cup of vinegar, 1/2 tsp salt, 1/4 tsp pepper
- Add your dressing to the salad and toss it all together
This is a great summer salad and Let it sit in the fridge for a couple hours, toss and maybe add more dressing and it’s my pleasure!
