Quick Sauce
I got a request for my recipe for my quick sauce and as always it’s my pleasure to post! This sauce will come together in just a few minutes so make sure everyone is ready to sit down for dinner because you need to serve as soon as it’s done.
You’ll need:
- 1 28 ounce can of whole Italian plum tomatoes
- 1 lb of your favorite pasta
- Salt
- Pepper
- Olive oil
- A palm full of chopped onion
- 2 cloves of garlic sliced
- A pinch of red pepper flakes
- 2 basil leaves torn or sliced
Directions:
- Get a large pot of salted water to boil
- Remove the tomatoes from the can and rough chop them
- In a large skillet 12″-13″ on medium heat add 2-tbs of olive oil, the onion, garlic, red pepper flakes and a pinch of salt and pepper
- Once this comes to a sizzle and the onions are translucent and the garlic is golden in color add the chopped tomatoes and all the juice
- Stir this all together
- On a med heat bring this to a boil and let it go for 10 minutes, folding everything together a couple times
- While this is happening cook your pasta to 2 minutes short of recommended time
- Now remove your undercooked pasta from the water and add directly to the sauce
- Lower the heat to medium and fold the pasta into the sauce for the final 2 minutes of “pasta cooking”
- Remove from the heat top with the basil a drizzle of olive oil and some grated Romano or Parmesan cheese
- Serve right away from the skillet
