Fresh Corn, Tomato and Basil Salad Recipe

It’s the perfect time of the year to take advantage of amazing fresh corn and tomatoes! This is a recipe I absolutely love and is very easy to prepare. Perfect with grilled fish, meats or as a vegetarian dish by itself!

Makes about 6-8 Servings

Ingredients

  • 6 ears roasted corn on the cob (about 3 cups of kernels)
  • 2 cups of tomatoes (cherries sliced in half are the best)
  • 1 cup of fresh basil sliced thin
  • 1 tablespoon freshly squeezed lime juice
  • Coarse Salt
  • Freshly ground black pepper

Directions

Combine the corn, tomatoes, basil and lime juice.  Season with salt and pepper.  Serve cold or at room temperature.
