Semolina Pasta Dough

I love Semolina pasta and the dough is so easy Screen Shot 2016-01-19 at 10.56.53 AMto make. After making this dough, you might never buy pasta again. As far as what sauce to use on this pasta, I use a simple tomato or even butter and sage with some grated Romano. But whatever your favorite sauce is, it will work perfectly on this homemade pasta.

You’ll need:

  • 2-cups of semolina flour
  • 2-eggs whisked
  • 2-tbs of water
  • 3-tbs of olive oil
  • 1/2 tsp of salt

Directions:

  1. Put the flour on a work surface and make a well in the middle.
  2. In a bowl mix the water, eggs, salt and olive oil together.
  3. Pour this into the flour well.
  4. Using a fork slowly pull the flour into the egg mixture until it’s all mixed.
  5. Using your hands form this into a stiff dough.
  6. Knead the dough for 10 minutes until it is elastic. If need be add drops of water along the way.
  7. Form the dough into a ball and wrap it tightly in plastic wrap. Let the dough sit on the counter in a warm place for 30 minutes.
  8. Use a pasta machine to make the pasta shape or roll it out by hand with a rolling pin on a lightly floured surface and cut into your pasta shape.
  9. Cook the pasta in a large pot of briskly salted water for just a minute or two.
