Spaghetti with Pancetta

You’ll need:

  • 1-lb of spaghetti cooked 2 minutes short of recommended time
  • 1/2-lb of pancetta cut into small pieces
  • 1/4-cup of extra virgin olive oil more for the finish
  • 2-tbs of butter
  • 2-Garlic cloves sliced
  • 1 pinch of red pepper flakes
  • 2-cups of the pasta water
  • Fresh grated Parmesan cheese

Directions:

  1. In a large skillet add half the olive oil and cook the pancetta till the fat is rendered
  2. Add the garlic and red pepper flakes and butter
  3. Sauté on low heat for 1-2 minutes
  4. Add the cooked pasta to the skillet with one cup of the pasta water
  5. Start tossing and folding the pasta into the sauce, add more water if needed
  6. Remove from the heat and slowly add 1/2 cup of grated Parmesan cheese and fold into the pasta.

Serve with a drizzle of olive oil and more cheese
