String Beans with Mint
It’s time to make this recipe, string beans and mint are both in season.
You’ll need:
- 1 lb. of fresh string beans
- 1 red bell pepper cleaned and diced
- 1/2 cup loosely packed mint leaves, stack and roll the mint then carefully slice them.
- 1 garlic clove minced
- 1 tsp sea salt
- 1/2 tsp black cracked pepper
- 3 tbs extra virgin olive oil
- 1 tbs fresh squeezed lemon juice
Directions:
- Clean and blanch the string beans in boiling water for just a couple minutes, remove and submerge in a ice bath. This will stop the cooking and lock in the deep green color.
- Whisk the lemon juice, olive oil, salt, pepper, garlic together to make the dressing
- Toss the string beans, mint, red bell pepper and dressing in a bowl
- Make a Mojito with the leftover mint.
