Stuck in the house because of the snow, Soup!

Stuck in the house because of the snow, Soup!This is what I made today as it was a snowy cold day here in North East! The ingredients listed are what I had in the house. Our imaginations are our only limitation when cooking. If you can imagine that the ingredients will taste good once cooked then go for it.

You will need: 

  • 6-chicken legs skin on
  • 1-qt Chicken stock
  • 1-qt water
  • 1-carrot chopped
  • 1-celery stalk chopped
  • 1-large onion chopped
  • 2-garlic cloves chopped
  • 2-tbs olive oil
  • 2-cans prepared cannellini beans rinsed
  • 1-14 ounce can diced tomatoes with the juice
  • 1/2 cup uncooked rice.
  • Salt
  • Pepper

Directions:

  1. In a large pot add the olive oil and once hot, brown the chicken on all sides, just a couple minutes.
  2. Then add the onion, carrot, celery and garlic, 1 tsp of salt n pepper and sauté this for 5 minutes on a medium heat, stirring often.
  3. Now add the stock and the water and bring this to a brisk boil. Immediately lower this to a low simmer and stir. Cover with a lid and allow this to simmer for 1/2 hour.
  4. Add the rice, stir, cover and allow this to simmer for 30 minutes.
  5. Remove the chicken legs and allow them to cool.
  6. Add the tomatoes and all the juice and the rinsed beans, stir, raise the heat and bring this to a boil. Immediately lower to a slow boil and leave the lid off.
  7. Shred the chicken from the bone and return the shredded chicken to the pot. Allow this to cook 15-20 minutes until the beans are tender, stir several times. I serve mine with some grated romano cheese and a drizzle of a good extra virgin olive oil. 

These are the ingredients I had in the house but you can add all kinds of vegetables and greens and beans.
