Summer Salad Orzo Salad

Summer Salad Orzo SaladPerfect for a main course or a great side dish!
You’ll need:

  • 1-lb orzo
  • 1/2 cup chopped
  • red bell peppers
  • 1/4 chopped onion
  • 2 garlic cloves minced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped
  • roasted peppers
  • extra virgin olive oil
  • red wine vinegar
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • Juice of one lemon
  •  2 cups baby arugula

Directions:

  1. Cook the orzo strain and put in a bowl.
  2. Add 1/4 cup olive oil toss and place in the fridge.
  3. After 30 minutes remove from the fridge and add 1/4 cup olive oil and 1/4 cup of vinegar and toss with all the ingredients except the arugula.
  4. Place back in the fridge covered with plastic wrap and allow this to chill for a couple hours.
  5. Right before you serve the salad add the arugula and toss.
