Vegetarian Split Pea Soup!

I love split pea soup and whats great aboutpeasoup pea soup is if you decide not to soak them over night you can still make split pea soup, in a pinch!

If you choose not to soak them overnight then just put them in a pot with cold water bring it to a boil for 10 minutes, cover and remove from the heat and let sit for an hour.

You’ll need:

  • 1-lb dry split green peas
  • 1-large onion minced
  • 2-carrots minced
  • 4-garlic cloves minced
  • 1-tsp of salt
  • 1/2-tsp black pepper
  • 1-tsp dry thyme
  • 1-qt vegetable stock
  • 1-bay leaf
  • 2-stalks of celery chopped
  • 2-tbs olive oil
  • 2-cups of water

Directions:

  1. In a large pot add the oil, garlic, onion, celery, carrots, salt and pepper.
  2. Sauté this for 10 minutes on a low heat. Do not burn the garlic.
  3. Now add the stock, water, bay leaf, thyme and bring this to a boil.
  4. Add the peas and bring to a boil.
  5. Reduce to a simmer, cover and simmer on a low heat.
  6. If you soaked the peas then summer for an hour if you didn’t soak the peas summer for a couple hours.
  7. Once the peas are tender and breaking up, remove the bay leaf.
  8.  You can either enjoy the soup as is or purée it.
